This is a delicious recipe from the Chinese tradition.
If you want to eat a tasty dish that will make you live a real Asian experience, you have to try this recipe! Tang Cu Pai Gu is bitter-sweet mix of ribs, spices and sauces with a sprinkle of vinegar and wine.
If you are lucky (and a bit lazy…), you can try Tang Cu Pai Gu in some famous Chinese restaurants or take-away.
I suggest you to try this recipe because it is a satisfying food experience.
If you are a good cook you can do it at home, following the recipe below!
INGREDIENTS:
1 pound spare ribs (cut into to 1.5 inch sections)
2 tablespoons of cooking oil
30-35g mashed rock sugar
2 tablespoons of light soy sauce
2 tablespoons of cooking wine
3 tablespoons of black vinegar
1 teaspoon of extra black vinegar
1 star anise (optional)
3 ginger slices
4 green onions (only the white part)
Hot water as needed
½ tablespoon of white sesame seed for garnishing
Spring onion for garnishing
INSTRUCTIONS:
1- Cut ribs into 1.5 inch sections. Place them in a pot with cold water. Bring to boiling and continue cooking for 2-3 minutes. Take the ribs out and rinse them under running warm water. Set aside to drain.
2- Add cooking oil and smashed rock sugar in a wok, heat over a slow fire. Keep stirring until the sugar melts and turns into dark red.
3- Add ribs until they become almost brown, place light soy sauce on top, cooking wine and black vinegar. Continue stirring and frying for 2 minutes, pour enough hot water to cover and add ginger, green onion and star anise.
4- Cover the pan with the lid and simmer for 25 minutes over slow fire. Stir once or twice in the process. Pick the ginger, green onion and star anise out in the later stage.
5- Turn up the fire. Keep stirring and stop when the sauce has almost adhered to the ribs. Be carefully in the last minutes in order not to get your ribs overcooked.
6- Add 1 extra teaspoon of black vinegar and sesame seeds. Combine well.
7- Garnish with chopped springs onion before service.

I’ve been familiar to this recipe by chance…
It was a hot sunday morning in summer 2015. My friend and I decided to ride our scooter to the Oglio river near Palazzolo and there have a swim. Around midday other friends of us joined us and we had our bag lunch all toghether and after that we started getting fun diving and swimming in the river. After taking some pictures and selfies, it was time to go back home. When we climbed on our scooter again my friend and I realised that it didn’t start. We tried and tried again but it definitively left us walking home. So we had to push it for about 2 km until the house of my friend’s granny. She soon noticed we were very tired after the effort so she offered us a refreshing traditional dessert from Palermo. It’s called “gelo di melone”, a kind of watermelon pudding with chocolate chips on the top combined with a glass of black cherry sparkling syrup. I enjoyed it so much that I immediately asked her the recipe. Here it is, except the quantities of the ingredients because, my friend's grandmother said, "they are a secret".
Ingredients:
Watermelon
Cornstarch
Sugar
Chocolate chips
Preparation:
Grate the watermelon, separating the juice from the pulp and the seeds.
Pour the juice into a small pot, heat it adding the cornstarch and the sugar until you get a thick and jelly-like mixture.
Pour the mixture into proper molds and garnish with the chocolate chips.
Once it's cooled down, leave it to rest in the fridge for at least two or three hours.
Finally serve the "gelo di melone" with a glass of black cherry syrup (possibly diluted with sparkling water) to accompany it.

INGREDIENTS
24 cookies
3 tablespoons of butter melted
250 g Philadelphia (or cream cheese softened)
¾ cup of sugar
3 eggs
DIRECTIONS
Preparation time: 20 m
Cooking time: 45 m
Ready in 4 h 5 m
PREPARATION
Heat oven to 350 degrees.
Put 16 cookies in a plastic bag, flatten the bag to remove the excess of air, then finely crush cookies by rolling a rolling pin across the bag.
Place the crushed cookies in a bowl and add butter mixing carefully.
Press firmly onto bottom of springform pan
Beat the cream cheese, sugar and vanilla in a large bowl using an electrical mixer on medium speed until the mixture is well blended. Then add the 3 eggs one at a time, mixing after each addition.
Sprinkle with marmalade and make the cake tasty and lip-smacking adding red and fresh strawberries
Bake for 45 minutes or until the centre is almost cooked. Refrigerate 3 hours or overnight before serving.
Cut into 12 pieces and enjoy it!
If you resist eating the whole cheesecake store it in the refrigerator.

The Acuzano family, from 1938, manages the historic “Friggitoria Vomero”: here you can find Zeppole that are fresh pasta with a pinch of salt, fried in hot oil. The Panzerotti are potatoes croquettes stuffed with parsley, parmigiano or pecorino, salt and pepper, fried in hot oil as well.
Frittatine di pasta
Frittatine di pasta are that type of dish that once you have tried it, you cannot stop eating!

Taralli napoletani
This is a product that nowadays represents a tipical excellence.
Taralli are made with flour, sugna (lard), one cube of brewer’s yeast, almond, salt and pepper (the right amount), all baked for 25 minutes. The best Taralli are made by the Infante family, that owns “Casa Infante”. They are the exellence from the 1940.
Sfogliatelle
And, finally, here we are to the typical Neapolitan dessert: la Sfogliatella. This historic delight conquests every palate, Neapolitan or not.
The mixture is made by flour, strutto (lard), water, a pinch of salt, honey, stuffed with semolina, fresh ricotta, powdered sugar, eggs, water, sweets, vanilla extract, cinnamon, a pich of salt.
The historic “Pintauro” is the most famous bakery, that takes out the best Sfogliatelle of the planet!
Nowdays there also modern and tasty street food like Kebab, Pita, Hamburger and Hotdogs ...but that cannot be compared with the traditional Neapolitan dishes!

Hello we are the Truceklan group!
We chose this topic because one of our class mate is very good at preparing this dish, and sometimes he makes us taste it (we are very lucky!)
This is his mother's recipe. We asked her if she could give it to us: at the beginning she did not want but later she decided to share it.
Ingredients:
- 1.5 kg of eggplant
- 3 eggs
- 150 grams of flour
- 500 g of tomatoes
- 1/2 onion
- A few leaves of basil
- 1/2 cup of oil
- 300 grams of smoked cheese
- 150 grams of grated Parmesan cheese
- salt
- oil (extra virgin olive oil)
How to prepare Parmigiana
To prepare the sauce soften the onion in oil, add the chopped tomatoes, just before finishing the cooking, add the basil and season with salt.

Heidi lives in a village in Switzerland. When she is only a year old, her parents die and she is left with her aunt Dete. Dete moves to Frankfurt and she takes Heidi to live with her grandfather in the mountains, but he does not want her but has no choice. Heidi is a sweet-tempered child and Grandfather soon comes to love her. She makes friends with a boy called Peter and she loves going up the mountain with him and his goats. She is also afraid because the house is old and it might fall down. Heidi goes to visit her every fine day, and her grandfather goes sometimes to repair the house. Two years pass and Dete returns to take Heidi to the house of a rich family in Frankfurt, whose twelve-year-old invalid daughter, Clara, needs company. Heidi makes friends with her and learns to read, but she is homesick. She writes a letter to Clara’s father, who comes quickly and he finds out Heidi walking in her sleep in her white nightdress. He sees the child is unhappy and decides to send her home. On her way up the mountain, Heidi visits Peter’s grandmother and she also teaches Peter to read. Then Clara visits Heidi and loves the mountain life and eventually she learns to walk.
Heidi is a cartoon that accompanied us in our days since we were kids.
The little Heidi was loved by everyone and has made happy our childhood happier:
it cheered our mornings before going to school. She taught us humility and
generosity toward others and the value of friendship. We like to remember when
Heidi, despite the negative events, could find a way to solve the situation and
make everyone happy… all by herself, without any help. Thinking about the new
generation, we realize that curiosity that aroused in us in waiting a new
episode was greater, since we didn’t have all the technology that features the
media now.
So, we wonder, can today’s children really grasp the message that
the author was willing to send us?

Bob Dylan released the
album “The freewheelin’ Bob Dylan” in the spring of 1963. In the meantime,
Martin Luther King pronounced his famous words “I have a dream” and there was
also the murder of John Kennedy (president of the USA) in Dallas. The song’s
melody was adapted from the traditional “Nottamun Town” (an English folk song
which possibly dates from the late medieval period) and it became immediately a
hymn for the pacifist. In the USA and
all around the world the radio was transmitting this song:

Let's reflect about this
